Ingredients
(for about 14 balls)150g leftover rice
1 egg
2 tablespoons chopped mixed herbs
2 tablespoons Parmesan cheese
1 tablespoon breadcrumbs
14 green olives
80g mozzarella or other stringy cheese
Salt and pepper to taste
Rice and Olive Balls are really tasty! Very simple to make, they are great to serve as an aperitif or an appetiser to whet your guests' appetites.
Grease your hands well and form into balls: place a green olive, cut in half, in the middle of each one, which you have already stuffed with a mozzarella cube. Then close the balls, grease them and coat them well in breadcrumbs.
Drizzle with olive oil, then place on a baking tray lined with baking paper and bake in a ventilated oven for about 20 minutes at 200°C (or until golden brown).
Serve immediately with pink sauce or mayonnaise if desired.
