FILOBIANCO

This wine is the prime achievement of the tenacity and skill of our vine growers who cultivate this variety on very steep slopes at the feet of the Dolomites. The soils of calcareous and porphyric origin confer an elegant mineral note that nicely blends with the floral fragrances of the grape and with the aromas generated by the yeast during fermentation.

Vinification
The grapes are picked in late September, cold fermented for 5-8 hours and then pressed. The must, after natural cold decanting, is allowed to ferment at low temperature.
Characteristics
The aromatic profile evokes the minerality of the calcareous and porphyric rocks of the area, with notes of flint, sage and nettle, well blended with the citrusy aromas of lime and grapefruit.
Pairings
A fresh wine that is excellent accompaniment to seafood hors d’oeuvres and rice dishes.
