As we do every year, we are now witnessing the ripening process (“invaiatura” in italian) – the phase in which the vine begins to carry the nutrients (especially sugar) towards the cluster of grapes. This begins the accumulation of polyphenols in the skin and the synthesis of aromatic compounds in the grapes: they are therefore enlarged and acquire an elastic consistency, turning from green to their final color, which varies according to the type.
Ripening does not occur simultaneously in all the grapes in the bunch, nor in all the plants in the vineyard.From the ripening start, it then takes about 40-50 days for the bunch to mature, depending on weather conditions, the varieties, and methods of cultivation.
