PANNA COTTA WITH SEASONAL FRUIT

Ingredients
500ml. fresh liquid cream.
150g. icing sugar
6g. fish glue
1 vanilla pod
Seasonal fruits

Preparation
Leave the fish glue in cold water for 10 mins and slice the vanilla pod long ways, remove and keep aside the seeds. Put the cream in a pan and add the sliced vanilla, the seeds and  icing sugar. Slowly heat all on a low flame without bringing to the boil. Carefully squeeze out the fish glue and place in the cream mix and keep stirring until it has completely dissolved. At this stage strain the mix through a fine meshed seive so as to keep back the vanilla pod. Pour the panna cotta, using a spoon to help, into cups . Place the panna cotta in the fridge to set for at least 5 hours and serve garnished with seasonal fruits.
