AVOCADO, ROCKET AND EGG SALAD

Ingredients
2 avocados
200g. rocket
3 eggs (hard boiled)
1 lemon
Several mint leaves
For the sauce:
3 tablespoons of apple vinegar
1 orange
1 teaspoon of acacia honey
Extra virgin olive oil
Salt and pepper

Preparation
Put the vinegar, orange juice, honey and salt and pepper to taste in a bowl. Mix well, adding a little oil until it becomes a creamy sauce. Cut the avocado in half,remove the stone and peel it. Slice the avocado on a chopping board and squeeze the lemon juice over it. Chop the eggs which have been hard boiled and place the prepared avocado, chopped egg and rocket in a large salad bowl. Dress with the previously prepared sauce and decorate with a few mint leaves and a sprinkle of fresh ground pepper.
