BEEF TAGLIATA IN BALSAMIC VINEGAR WITH AVOCADO SALAD

Ingredients:
500g. Beef sirloin
Half an avocado
100g. rocket
100g, cherry tomatoes
Extra virgin olive oil
Balsamic vinegar
Salt and pepper

Preparation:
Heat up a griddle pan, add cooking salt and carefully place the meat in the pan cooking it on either side for about 4 minutes.Take care not to puncture the meat so the juices don't come out. Take the meat off the heat and cut into slices of about 2 cm thick. Meanwhile prepare a bed of avocado,rocket and quartered cherry tomatoes. Place the slices of meat on this bed of rocket and cherry tomatoes and flavour with salt and pepper according to taste. Dress with a drizzle of balsamic vinegar.
