AVOCADO CREAM

Ingredients:
2  ripe avocados
250g.low fat stock
2 pots of whole natural yoghurt
2 tablespoons of lemon juice
2 fresh small onions
salt and paprika

Preparation:
Peel and slice the avocado. Place in the food processor with the lemon juice and salt. Blend for one minute then add the stock and blend again until you get a smooth cream.Pour into a bowl and dilute with the yoghurt. Cover the bowl with clingfilm and place in the fridge for a couple of hours. Serve out the cream into four shallow bowls and dust with paprika.
